Roka Fella follows the Omakase culinary concept, which is one of the pinnacles of Japanese cuisine. Omakase comes from the verb “Makasu,” which means “to trust.” 

When it comes to the Land of the Rising Sun, everyone knows about the diversity of Japanese culture, such as tea ceremonies, apology culture, culinary culture, and more. Speaking of Japanese culinary culture, the most famous dish is undoubtedly Sushi, which is prepared by chefs using ingredients like shrimp, fish, and abalone, served with vinegar and salt-seasoned rice.

Located in the heart of District 1, Roka Fella is considered a worthy restaurant for diners to experience the most famous dishes of the Land of the Rising Sun.

Roka Fella follows the Omakase culinary concept, which is one of the pinnacles of Japanese cuisine. With the Omakase style, diners will experience the excitement of anticipating each dish and enjoy the surprises of flavors that the chef has put their heart into.

Most of the ingredients used in the dishes are imported by air from Japan, so the menu changes with the seasons in Japan.

At Roka Fella, besides the exciting experience of Omakase cuisine, there is also a luxurious classical music space above the restaurant called the vinyl bar. Aris Sanjaya, a world-class mixologist, serves one-of-a-kind drinks accompanied by classic soul, jazz, and R&B music.

Part of the interior decoration of the restaurant includes contributions from Sài Gòn Horeca, the trusted partner chosen by HypeAsia to provide consulting, design, and complete installation of equipment for the Cooking Kitchen, Sushi Counter, and Bar Counter.

With a relatively small area of about 4 square meters, the interior space of the cooking kitchen is quite compact. We have carefully selected and arranged each piece of equipment to meet operational requirements. We have considered the airflow inside the kitchen, the provision of additional ventilation to ensure a comfortable and pleasant temperature for the chef during cooking operations.

The sushi counter, on the other hand, is where mainly refrigerators and freezers are arranged due to the specific nature of preserving fresh ingredients such as fish and shrimp.

The Omakase culinary concept uses a variety of fresh ingredients such as salmon, bluefin tuna, and shrimp, so the cooking kitchen is also equipped with additional refrigeration units and even an ice-making machine to enhance preservation capabilities.

The Importance of Regular Maintenance for Cafeteria Kitchen Equipment

The cooking kitchen includes imported equipment such as refrigerators, deep fryers, 4-burner stoves, salamander grills, and some stainless steel equipment produced by Sài Gòn Horeca, such as smoke hoods, sinks, wall-mounted shelves, and grease separators.
