With skillful hands and creative minds, pastry artisans have perfectly combined the flavors of their homeland with the taste of distant Western counterparts, resulting in the first Marble Danish pastry in a bakery located in Gionmachi-minamigawa, Higashiyama-ku, Kyoto.

From the aroma to the taste, the pastry is highly regarded, especially captivating with its patterns of marble stone created by the talent and dedication of the pastry artisans.

Building on the success of Marble Danish, Grand Marble has developed traditional pastry recipes to create Kyoto Sansyoku, Maple Caramel, and Gion Tsujiri Matcha An. These are four popular varieties of the brand.

To create delicious pastries, the artisans carefully select intricate ingredients, calculate precise proportions, knead the dough, let it rise, and follow a specific process and standards. There are manual steps as well as the support of modern machinery to produce perfectly flavored pastries.

Based on the overall project layout combined with standard procedures for a pastry room, we have allocated the space into six functional areas: Ingredient Reception Area, Sanitization Area, Mixing and Rolling Dough Area, Pastry Making Area, Storage Area, and Packaging Inspection Area.

The Ingredient Reception Area includes weighing equipment, hand-washing sinks, insect repellent lamps, various storage shelves, and a 10-cubic-meter cold room maintained at a temperature of 2 degrees Celsius to ensure proper preservation of fresh ingredients such as strawberries, oranges, and mangoes.

The sanitization area is to ensure that every individual stepping into the pastry room is free from biological contaminants, ensuring food safety and hygiene.

After completing the sanitization process, the first step begins in the Mixing and Rolling Dough Area. This area is equipped with two invaluable devices: a dough mixer and a dough sheeter from the Chanmag-Taiwan brand. It also includes refrigerated and frozen storage cabinets (Hoshizaki-Japan) and some stainless steel equipment such as sinks and wall-mounted shelves.

The Pastry Making Area consists of a dough proofing cabinet, an oven from the Chanmag brand, a Hoshizaki refrigerated table, and an inox table with a marble stone surface for manual pastry preparation. After baking, the pastries are arranged on trolleys and stored in refrigerated rooms.

The final step involves inspecting and packaging the delightful Marble Danish pastries. Since the packaging process is carried out directly by the staff, this area only includes a sink, a slicing machine, and an inox table.
