Along Gionmachi-minamigawa in Higashiyama-ku, Kyoto — amidst the thousand-year-old historic capital — master pastry artisans crafted an iconic masterpiece: the very first Marble Danish. Seamlessly blending traditional Japanese terroir with Western pastry viennoiserie, they inaugurated a distinguished new chapter in Kyoto baking heritage.

From intoxicating aroma to delicate palate, this pastry is celebrated worldwide, particularly for its distinctive marble-veined swirls crafted through the talent and dedication of master bakers.

The Journey Delivering Grand Marble Pastries to Connoisseurs

To craft delectable artisanal pastries, Grand Marble master bakers meticulously select premium ingredients, knead, proof, and uphold rigorous protocols — combining artisanal mastery with advanced modern machinery. Saigon Horeca served as the comprehensive turnkey design and fit-out partner for the bakery facility, from raw prep to final packaging.

Based on the master architectural layout and standard bakery operating procedures (SOP), we zoned the facility into six functional areas: raw material intake, sanitation, dough mixing & laminating, baking, holding storage, and inspection & packaging.

Equipment Layout & Operational Workflow

The receiving dock features precision scales, handwash sinks, insect trap lamps, and a 10m³ cold room held at 2°C for optimal preservation of strawberries, oranges, and mangoes. Beyond this, the Mixing and Sheeting area forms the heart of production.

  • Chanmag (Taiwan) spiral mixer and dough sheeter powering the mixing and rolling station.
  • Hoshizaki (Japan) reach-in refrigerators and freezers paired with stainless steel wash basins and wall shelving.
  • 10m³ walk-in cooler holding 2°C for receiving and preserving fresh produce.
  • Six functional zones arranged along a one-way workflow, maximizing sanitation standards and operational throughput.
