But hidden behind that petite exterior is a full-scale industrial kitchen design challenge, demanding careful calculation of functionality, storage, and operations. The space is just over 11m², yet must handle two major functions: a professional bakery kitchen and an integrated bar serving Italian-style coffee – all in a compact, aesthetic, and efficiently operating space.
The client's brief for Saigon Horeca was straightforward yet exacting: transform this compact footprint into a fully equipped, turnkey pastry kitchen — combining ergonomic comfort, artisanal aesthetics, and high-efficiency operational throughput.
Right from the survey stage, Saigon Horeca's engineering team realized: to turn an 11m² space into an efficient bakery cum café bar, off-the-shelf equipment wouldn't work – all stainless steel equipment had to be custom-made to actual dimensions.
Every centimeter was carefully calculated:
Notably, Saigon Horeca implemented heavy-duty pull-out slide cabinetry instead of conventional swing doors. This engineering solution maximizes internal cabinet depth, accelerates retrieval, and keeps all culinary tools organized within arm's reach.
Thanks to this logical arrangement, Hemma Desserts can run two independent processes (pastry & coffee) in the same space – efficient, safe, and aesthetic.
