Located at 40E Ngo Duc Ke, Ben Nghe Ward, just steps from Nguyen Hue Walking Street, Moa Moa is not just a pasta restaurant – it is where craftsmanship, technique, and culinary culture intersect in every detail.
Partnering on this project, Saigon Horeca approached Moa Moa not as a conventional kitchen build but as a space – operations – experience problem, where every design decision must serve the spirit of Italiano autentico.
Italian cuisine, particularly handmade pasta, places the craft of preparation center stage. At Moa Moa, the kitchen is not sequestered behind closed walls, but celebrated as the beating heart of the venue — where diners absorb the dynamic culinary rhythm: from dough mixing and pasta rolling to boiling and final garnishing.

The kitchen layout was engineered by SGH under the Italian open-kitchen ethos: tidy, coherent, clearly zoned yet maintaining smooth movement. The culinary space remains sufficiently open to engage guests while strictly standardized to satisfy commercial pasta kitchen rigors.
Unlike general Western kitchen setups, a pasta kitchen demands flawless continuity across stages. From dough mixing, fresh pasta shaping, and boiling to final finishing—every station aligns along a logical axis to eliminate wasted motion and maintain service tempo during peak hours.

With an open kitchen model and prime location adjacent to Nguyen Hue Walking Street, Moa Moa's biggest challenge is not just cooking well, but also controlling odors and smoke.
Saigon Horeca supplied and installed specialized exhaust hoods and extraction fan systems, engineered to precise thermal loads and tailored specifically for Western cooktops and charcoal grills.
This engineering ensures a well-ventilated kitchen that never compromises guest comfort, while fully adhering to life safety and urban environmental codes in high-density downtown districts.
