In the F&B industry, many restaurants and hotels invest hundreds of millions in industrial kitchens — only to realize after a few months of operation that things do not work as expected. The kitchen is too cramped, staff move around each other, heat cannot escape quickly, grease and oil clog the exhaust pipe, and equipment deteriorates quickly.
The cause is not the chef or the process, but the kitchen design itself – where every detail is made according to a pre-made model, not suitable for the space and actual operation.
That’s why Saigon Horeca does not produce mass kitchens.
Instead, we choose a more difficult path – designing a bespoke kitchen, where each drawing, each device, each pipe is calculated specifically for each specific space.
Bespoke kitchens are not just more beautiful or more advanced – they are more accurate, more efficient, and safer for the operator.
This is the philosophy that Saigon Horeca has been steadfast in for more than a decade accompanying hundreds of restaurant, bar and hotel kitchen projects nationwide.
The problem of mass kitchens – When every kitchen is the same
On the market today, most industrial stoves are manufactured according to ready-made models. Suppliers only need to “copy – paste” the design, change the size slightly and then mass install it for many different restaurants.
At first glance, this method seems to save time and money. But when put into operation, small mistakes in design create big consequences:
- The cooking process is blocked: The kitchen is not arranged in a reasonable flow, causing the chef to constantly turn around and move around each other. Every second that passes is a second of wasted productivity.
- Poor smoke extraction system: Because the same model is used for all spaces, air pressure and pipe length are not calculated separately, leading to smoke, heat or grease remaining.
- Equipment quickly degrades: Lack of synchronization between power, gas, water and floor drainage causes the equipment to operate overloaded or not at its designed capacity.
- Not meeting fire prevention and hygiene standards: Mass kitchens often ignore small technical details such as safety distance, heat isolation area, or drainage slope – factors that inspection agencies pay special attention to.
As a result, after a few months, the investor has to repair – upgrade – replace almost everything, the cost is many times higher than investing correctly from the beginning.

What is a Bespoke Kitchen – And why is it Saigon Horeca’s direction
In the world of professional cuisine, a “bespoke kitchen” is not simply a beautifully designed kitchen or using high-end equipment. It is a system created specifically for a specific space, process, and team — the same way a suit is hand-tailored for each wearer.
Bespoke kitchens start from “understanding”
Before having the first drawing, the Saigon Horeca team always starts by sitting with customers to understand how they operate:
- What’s on the menu?
- How many chefs does an average kitchen shift have?
- Do the processing, washing, and serving processes intersect?
- Does the kitchen space have any restrictions on height, drainage, or exhaust?
- ….
Only when we understand every detail, we begin to draw bespoke designs – absolutely suitable for actual operations.
Project: The Royal – All Day Dining (District 1, Ho Chi Minh City), Saigon Horeca has designed a complete bespoke kitchen system for The Royal, from the hot stove, preparation area, to the bar serving continuously all day.
Due to the characteristics of the space in a high-rise building, the system smoke extraction and fresh air supply is calculated separately to ensure natural convection airflow, without causing heat pressure during peak hours.
Each device, gas pipe and washing area layout are designed to suit closed operating flow, helping to optimize personnel and save energy.
Optimized bespoke kitchen according to “work flow”
In a professional restaurant kitchen, time is money.
The bespoke design allows for a “work flow” layout – from preliminary processing → processing → dish creation → cleaning – as smoothly as an industrial chain. No more chefs jostling each other in the frying area, no more standing water on the washing floor, no more smoky oil mixed into the processing area.
Every detail serves a single goal: highest operating performance and absolute safety.
Saigon Horeca did not choose mass installation for the Ganh Hao project – instead, the design team created a bespoke kitchen with a coastal identity:
- The kitchen is divided into many specialized lines for seafood, grilling, frying and cold processing.
- The smoke extraction system is designed to be anti-salt and anti-corrosion – something that conventional industrial stoves do not take into account.
- The movement and layout are optimized so that chefs can operate smoothly in humid, salty and greasy environments.

Making a bespoke kitchen is much more difficult than mass production. Each project is a new problem – each pipe, each outlet, each heat mass must be measured, drawn, and calculated.
